The other founder is a proud local with an appreciation for Chicago food and culture. Food holds a special place in our lives, creating connections rooted in pure joy. It is this share love and understanding that has united us, driving our mission to create something truly special. We aim to weave the classic NYC deli sandwich into the fabric of Chicago, showcasing quality ingredients from the finest farmers and artisans.

John Sandberg
From New Haven, CT, John was raised by cutlet sandwiches. When he moved to Chicago after college, he was surprised it hadn’t made its way to the Midwest.
“As an east coast transplant, I can’t wait to introduce this delicious staple from my childhood to the Chicago community.”

Fernando Ferrer
Born and raised in Evanston, Fernando loves everything about Chicago and its cuisine. He is determined to weave the Italian cutlet sandwich into the fabric of our local culture.

Head Chef
Riley McCluskey
From Saratoga Springs, NY, Riley gained his foundation at the Institute of Culinary Education. He moved to Chicago to learn from of the best local chefs the city has to offer.
“I look forward to bringing what I’ve learned from these world-renowned restaurants to the vibrant farmer’s market.“
